I am always trying to create new recipes for our home but most days its a struggle. Muffins are something I love to have around the house because they are easy for my husband to quickly grab when he is running our the door for for in the morning. Unfortunately for him he is usually stuck with dried out experiments gone wrong. On Sunday I told him, “Today is the day, I can just feel it.”Thankfully I am married to one of the most patient men I know so as usual he just says, “Can’t wait to try them.”
These muffins turned out beautifully and have become a family favourite.

Almond Carrot Banana Muffins

Ingredients:

2 1/2 cups almond flour
1 cup carrots, grated
3 eggs
1/2 cup ripped bananas, mashed (2 1/2 to 3 bananas)
1/4 cup coconut oil, melted
1/4 cup unpasteurized honey
1/2 tsp baking soda
pinch sea salt

Directions:

Preheat oven to 350 degrees

In a large mixing bowl combine the grated carrots, eggs, mashed bananas, melted coconut oil and honey and stir mixture together until well combined

Slowly add your almond flour, baking soda and sea salt to the mixing bowl and mix until well combined

Insert your muffin cases or use a brush and lightly coat the muffin tray with coconut oil
Evenly add your muffin mixture to make 12 muffins
Cook for 20 to 25 minutes
Let cool for 20 minutes
